  • 4 large russet potatoes (washed and patted dry)
  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat oven to 425°F and arrange a rack in the middle.
  2. Position each potato between two chopsticks or skewers, then slice vertical slits about ⅛ inch apart without cutting all the way through.
  3. Place sliced potatoes on a baking sheet and brush half of the melted butter over them, including inside the slits.
  4. Season generously with kosher salt and pepper.
  5. Bake for 30 minutes; then gently pull apart the layers, brushing with remaining melted butter.
  6. Return to oven and bake for an additional 30-35 minutes until golden brown and crispy.
