  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. Peel and dice potatoes into small cubes, then add to the skillet with olive oil. Cook until softened and browned.
  3. Remove potatoes and sauté onions and garlic until translucent.
  4. Add ground turkey, breaking it into pieces, and cook until fully cooked.
  5. Season with thyme, paprika, salt, and pepper.
  6. Return potatoes to the skillet, add chicken broth, and mix well.
  7. Cover and simmer for about five minutes.
  8. Stir in fresh parsley just before serving.
