  • 2 medium sweet potatoes (peeled and diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or frozen, thawed)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic for 2-3 minutes until fragrant.
  3. Add ground turkey to the skillet and cook until browned (about 5-7 minutes). Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Stir in diced red bell pepper and spinach; cook for another couple of minutes until veggies are tender.
  5. Boil diced sweet potatoes in a separate pot until tender (about 10 minutes); drain well.
  6. In a baking dish, layer cooked sweet potatoes and turkey mixture. Pour low-sodium chicken broth over it.
  7. If using cheese, sprinkle on top and bake for 15-20 minutes until hot and bubbly.
  8. Allow to cool slightly before serving.
