  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • Optional: diced tomatoes and shredded cheddar cheese for topping

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce sweet potatoes several times with a fork and bake on a parchment-lined baking sheet for 40–50 minutes until tender.
  2. In a skillet over medium heat, heat olive oil. Add chopped onion; sauté for 3–4 minutes until softened.
  3. Stir in minced garlic and chopped bell pepper; cook for an additional couple of minutes.
  4. Add ground turkey; break it apart and cook for 6–8 minutes until browned.
  5. Mix in cumin, chili powder, paprika, salt, and pepper.
  6. Stir in corn kernels (and diced tomatoes if using); cook until heated through.
  7. Once sweet potatoes are done baking, slice them open lengthwise and fluff insides with a fork.
  8. Fill each potato half generously with the turkey mixture.
  9. If desired, top with cheese and return to the oven for an additional 5–7 minutes until melted.
  10. Garnish with fresh cilantro before serving.
