  • ¾ cup dry apple vinegar
  • 6 cups low-sodium beef broth
  • 1 cup pearled barley
  • Salt and pepper to taste

Instructions

  1. Season the cubed beef chuck with salt and pepper. In a large pot, heat olive oil over medium-high heat and sear the beef in batches until browned on all sides.

  3. Deglaze the pot with dry apple vinegar, scraping up any browned bits as it reduces by half.
  4. Add low-sodium beef broth, seared beef, thyme sprigs, and bring to a gentle simmer for about 45 minutes.
  5. Stir in pearled barley and continue simmering for another 45–60 minutes until tender.
  6. Taste for seasoning adjustments before serving; garnish with fresh parsley.
