  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese’s Pieces
  • Melted chocolate for drizzling (optional)

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla extract in a bowl until smooth. Scoop dollops onto parchment-lined baking sheets and freeze for at least 1 hour.
  2. In a separate bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla extract until combined.
  3. Whisk together flour, baking soda, and salt in another bowl. Gradually incorporate into the wet mixture. Fold in chocolate chips and Reese’s Pieces.
  4. Take about 2 tablespoons of cookie dough, flatten it in your hand, place a frozen cheesecake dollop in the center, cover with more dough, and seal edges.
  5. Bake on a parchment-lined sheet at 350°F (175°C) for 12-14 minutes until edges are golden.
