- 1 Cup Brown Sugar
- 1 Cup Pureed Pumpkin
- 1 Cup Dairy Free Milk (such as coconut)
- 2 Cups Gluten-Free All-Purpose Flour
- 3 tsp. Baking Powder
- 1 tsp. Xanthan Gum
- 1 tsp. Pumpkin Pie Spice
- Dash of Salt
- 1 tsp. Cinnamon
- ¼ tsp. Nutmeg
- 2 Cups Powdered Sugar
- 1 ½ tsp. Vanilla
- ½ tsp. Cinnamon
- ½ tsp. Maple Extract
- ½ TBSP Coconut Milk (any dairy free milk will do)
- Preheat oven to 350°F (175°C) and grease your donut pan.
- In a large bowl, whisk together eggs, sugars, vanilla, pumpkin puree, and dairy-free milk until smooth.
- In another bowl, mix gluten-free flour, baking powder, xanthan gum, pumpkin pie spice, cinnamon, nutmeg, and salt.
- Gradually combine dry ingredients into wet ingredients until just mixed.
- Fill each donut cavity halfway with batter and bake for about 20 minutes until a toothpick comes out clean.
- For the glaze, whisk powdered sugar with cinnamon, maple extract, and coconut milk until smooth.
- Once cooled slightly, dip the donuts into the glaze and let excess drip off before serving.
