  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar

  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 1/4 cup molasses
  • 2/3 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs, whisked
  • 1/3 cup unsalted butter, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/2 cup whipping cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup whipping cream
  • 2 teaspoons powdered sugar

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. For the crust, mix gingersnap crumbs with brown sugar and melted butter until combined. Press firmly into the bottom of the prepared pan.
  3. In a separate bowl, beat softened cream cheese until smooth. Gradually add sugars and spices, followed by cornstarch, molasses, sour cream, and vanilla. Mix in eggs one at a time until fully incorporated.
  4. Pour filling over the crust and place the springform pan inside a larger pan filled with boiling water to create a water bath.
  5. Bake for about 60 minutes until set but slightly jiggly in the center. Allow cooling before refrigerating overnight.
