  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices baguette or crusty bread, toasted
  • 1½ cups shredded Gruyère or Swiss cheese

Instructions

  1. Sear the short ribs: Heat olive oil in a large pot over medium-high heat. Season short ribs with salt and pepper, then brown on all sides before removing from the pot.
  2. Caramelize the onions: In the same pot, melt butter over medium heat. Add sliced onions and cook low and slow until golden brown (20–30 minutes).
