  • 2 whole oranges
  • ⅔ cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey (for glaze)
  • ½ cup fresh orange juice (for glaze)

Instructions

  1. Rinse and simmer the whole oranges in water for an hour. Allow to cool.
  2. Blend the cooled oranges until smooth.
  3. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch springform pan.
  4. In a bowl, combine blended oranges with honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract. Mix until smooth.
  5. Pour batter into the pan and bake for about one hour or until a toothpick comes out clean.
  6. For the glaze, simmer honey and orange juice in a pot until reduced by half.
  7. Brush the glaze over the warm cake and let it cool completely before serving.
