  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
  3. Mix in the egg and vanilla extract until fully combined.
  4. Add flour, salt, and baking powder; mix until just combined.
  5. Scoop out cookie dough onto a baking sheet and flatten each ball to about 1 inch thick. Press down in the center to create space for filling.
  6. Bake for 8-9 minutes until lightly golden. Allow cooling on the baking sheet.
