  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil salted water in a pot and cook carrot rounds for about 10–12 minutes until fork-tender. Drain and let cool slightly.
  3. Place boiled carrot rounds on the baking sheet and gently smash each round with a glass or measuring cup.
  4. Drizzle with olive oil, then sprinkle garlic powder, smoked paprika, salt, pepper, and grated Parmesan cheese over the smashed carrots.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until golden brown.
  6. Garnish with freshly chopped parsley before serving.
