  • 4 cups fresh spinach (about 120 g)
  • 4 ounces feta cheese, crumbled (about 115 g)
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Boil salted water in a large pot. Add gnocchi and cook according to package instructions until they float (about 2-3 minutes). Drain and set aside.
  2. Heat olive oil in a large frying pan over medium-high heat. Add cooked gnocchi and cook undisturbed for about 2-3 minutes until crispy on one side.
  3. Stir gently to crisp all sides for another 2-3 minutes.
  4. Reduce heat to medium; add minced garlic and sauté for about 1 minute until fragrant.
  5. Add the fresh spinach and stir until wilted (about 2-3 minutes).
