  • 2 sheets of thawed puff pastry
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • 3½ cups warm whole milk
  • 6 large egg yolks
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp cold unsalted butter
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C) and line baking trays with parchment.
  2. Roll out puff pastry sheets slightly and prick them with a fork to prevent puffing. Place on trays, cover with parchment and weigh down.
  3. Bake for 35-45 minutes until golden brown; cool completely.
  4. Trim edges of baked puff pastry to fit an 8×8-inch pan.
  5. In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix well.
  6. Warm milk in another pan until steaming but not boiling.
  7. Slowly mix warm milk into the egg mixture while whisking, then return to saucepan and cook until thickened (5-7 minutes).
  8. Remove from heat and stir in vanilla seeds and butter until melted.
  9. Line the pan with foil for easy removal, layer one piece of pastry at the bottom, pour custard on top, press down another pastry sheet, cover tightly, and refrigerate for at least four hours or overnight.
  10. Once set, lift out using foil overhang, slice into squares, dust with powdered sugar, and serve.
