  • 1/2 cup sun-dried tomatoes, chopped

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream or coconut cream for dairy-free
  • 1 cup freshly grated Parmesan cheese or nutritional yeast for dairy-free
  • 2 cups baby spinach
  • Salt and pepper to taste
  • Fresh basil leaves, torn (for garnish)

Instructions

  1. Cook penne pasta in salted boiling water until al dente; reserve some pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground turkey sausage and cook until browned.
  3. Reduce heat to medium; add garlic and sauté until fragrant. Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Simmer briefly.
