  • 12 oz chicken or turkey sausage
  • 1 tablespoon olive oil
  • 1 large sweet potato, cubed
  • 5 cloves garlic, minced
  • 8 oz tortellini
  • 4 oz fresh spinach
  • 1/2 cup heavy cream
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water

Instructions

  1. In a large pot, heat olive oil over medium heat. Add crumbled sausage and cook until browned.
  2. Stir in Italian seasoning and paprika; mix well.
  3. Add cubed sweet potatoes, minced garlic, red pepper flakes, and tomato paste. Stir to combine.
  4. Pour in 6 cups of water and bring to a boil.
  5. Reduce heat to simmer for 15 minutes until sweet potatoes are tender.
  6. Add tortellini and cook according to package instructions (about 10 minutes).
  7. Stir in fresh spinach until wilted.
  8. Remove from heat and mix in heavy cream until fully combined. Season to taste.
