  • 2 tbsp butter
  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock (or vegetable broth)
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream (or coconut cream)
  • ½ cup parmesan cheese, shredded (or vegan cheese)
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained and sliced

Instructions

  1. In a large skillet over medium-high heat, melt the butter. Add the seasoned chicken strips and sauté until golden brown and cooked through (about 5-7 minutes). Remove the chicken from the skillet.
  2. In the same skillet, sauté diced onions and garlic until translucent.
  3. Pour in the chicken stock (or vegetable broth) and add roasted red peppers along with heavy cream (or coconut cream). Stir to combine and let it simmer gently.
  4. Sprinkle in shredded parmesan cheese along with Italian seasoning. Stir until melted and smooth.
  5. Add the pepperoncini peppers back into the skillet along with the cooked chicken. Heat through for another minute or two.
  6. Serve immediately over rice or pasta, garnished with extra pepperoncini if desired.
