  • 1 cup all-purpose flour
  • 1 cup granulated sugar (divided)
  • ¾ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, flour, ½ cup sugar, and salt. Stir in melted butter until combined.
  3. Press two-thirds of the mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, beat cream cheese until smooth; add remaining sugar and eggs one at a time. Mix in lemon zest, juice, and vanilla until well blended.
  5. Pour the filling over the crust and sprinkle remaining crumb mixture on top.
  6. Bake for 30–35 minutes until the center is set but slightly jiggly; cool for an hour before refrigerating for at least three hours.
