  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups (1 liter) chicken or beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach or basil, chopped
  • Extra Parmesan cheese for serving
  • Fresh basil or parsley for garnish
  • Crushed red pepper flakes for heat

Instructions

  1. Prepare the meatballs by mixing ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper in a bowl. Form into 1-inch meatballs.
  2. Sear the meatballs in olive oil over medium heat until browned on all sides.
