  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley for garnish

Instructions

  1. Poke each potato with a fork and microwave in a bowl for 4 minutes, flipping halfway through.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. In a bowl, toss microwaved potatoes with olive oil, salt, and pepper until evenly coated.
  4. Place on the baking sheet and gently smash each potato to about 3/8 inch thick.
  5. Bake for 6 minutes, flip, and bake for another 6 minutes until golden brown.
  6. Remove from oven, sprinkle with chopped parsley, and drizzle melted butter before serving.
