  • 4 medium-sized sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and poke holes in the sweet potatoes, then bake for about 45 minutes until tender.
  2. Once cooled, cut the sweet potatoes in half and scoop out most flesh into a bowl, leaving some to maintain their shape.
  3. Mix the scooped sweet potato flesh with chopped apples, cranberries, brown sugar, cinnamon, butter, and salt until well combined.
  4. Spoon the mixture back into the sweet potato halves and return them to the oven at 350°F (175°C) for another 15–20 minutes until heated through.
