  • 3 1/2 lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered
  • Fresh thyme
  • Bay leaves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a Dutch oven, cook chopped bacon over medium-low heat until crispy; remove and set aside.
  3. Sear seasoned beef in batches on medium-high heat until browned; set aside.
  4. Sauté onions and carrots in butter until softened; add garlic, tomato paste, and flour; cook briefly.
  5. Pour in apple vinegar and beef stock; return beef and bacon to pot with herbs. Cover tightly and bake for about 2½ hours.
  6. Cook mushrooms in remaining butter; add pearl onions until golden.
  7. Mix mushrooms and onions into the pot; return to oven for an additional 45-60 minutes until beef is tender.
