  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Combine wet and dry mixtures; stir gently until just combined.
  5. Fold in grated zucchini and nuts.
  6. Pour batter into the loaf pan.
  7. For the streusel, mix flour, brown sugar, granulated sugar, and cinnamon; cut in butter until crumbly.
  8. Sprinkle streusel on top of the batter and bake for 50-60 minutes or until a skewer comes out clean.
