  • 2 cups warm water
  • 2 tsp active dry yeast
  • 1 tsp granulated sugar
  • 4 cups bread flour
  • 1 1/2 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter (melted)
  • 6 tbsp brown butter
  • 1/3 cup light brown sugar
  • 2 tsp ground cinnamon
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 2 1/2 tbsp milk

Instructions

  1. Activate the yeast by combining warm water and granulated sugar, then sprinkle yeast over it. Let it foam for 10-15 minutes.
  2. In a large bowl, whisk together bread flour and salt. Add the yeast mixture and olive oil; mix until a sticky dough forms.
  3. Lightly coat the dough with olive oil, cover, and refrigerate overnight (12 hours).
  4. Grease a baking pan, pour in melted butter, and place the risen dough in it. Let rise in a warm spot for 1½ to 2 hours.
  5. Make brown butter by cooking half a cup of unsalted butter until golden-brown in scent.
  6. Combine brown sugar and cinnamon into the browned butter mixture.
  7. Preheat oven to 450°F, dimple the dough with wet fingers, drizzle cinnamon-butter topping on it.
  8. Bake for 20-25 minutes until golden brown; cool slightly before icing with powdered sugar mixed with milk and vanilla.
