  • ⅓ cup light brown sugar
  • 2 tbsp instant espresso powder
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ cup unsalted butter (cold)
  • ¾ cup mini semi-sweet chocolate chips
  • 1 cup heavy whipping cream (cold)
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)
  • 1 tbsp heavy whipping cream (for the glaze)
  • 1 cup powdered sugar (sifted)
  • 1 tsp instant espresso powder (for the glaze)
  • 1 tbsp brewed coffee (for the glaze)
  • 12 tbsp milk or cream (or water for the glaze)

Instructions

  1. Preheat your oven to 400°F. In a large bowl, combine flour, brown sugar, baking powder, salt, and instant espresso powder.
  2. Cut in cold butter until coarse crumbs form. Stir in mini chocolate chips.
  3. In another bowl, whisk together heavy cream and vanilla extract. Gradually add to the dry mixture, mixing gently until combined.
  4. Turn the dough onto a floured surface and shape into an 8-inch circle. Cut into triangles and chill for 30 minutes.
  5. Bake for 20-25 minutes until golden brown. Cool on a wire rack before drizzling with coffee glaze made from powdered sugar, espresso powder, brewed coffee, and milk.
