1 large head of cauliflower
2 (15-ounce) cans chickpeas
Juice of 2 limes
1 ripe avocado
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup red onion, finely diced
1/4 cup cilantro, chopped
1 tablespoon chili sauce (like Sriracha or Gochujang)
4 large tortillas or wraps
Optional toppings: shredded lettuce, sliced tomatoes, bell peppers, pickled onions
Instructions
Preheat oven to 425°F (220°C). Break the cauliflower into florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25 minutes until golden.
While the cauliflower roasts, mix rinsed chickpeas with diced red onion, cilantro, lime juice, olive oil, chili sauce, spices, and salt in a bowl.
For the avocado crema, blend or mash the avocado with Greek yogurt (or vegan alternative), lime juice, water, and salt until smooth.
Assemble your wraps by layering roasted cauliflower and chickpea filling on tortillas; drizzle with avocado crema and add optional toppings before rolling tightly.
