  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil. Season chicken breasts with salt, pepper, and thyme. Sear for about 5-6 minutes per side until golden brown.
  3. Remove chicken from skillet. Add garlic and sauté for about a minute, then add mushrooms and cook for another 5 minutes.
  4. Stir in spinach and cook until wilted (2-3 minutes). Add heavy cream and chicken broth; let simmer until thickened (3-4 minutes).
  5. Place chicken in a greased baking dish; pour the sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until bubbly and cheese is melted.
  7. Garnish with fresh parsley if desired before serving.
