  • 3/4 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sweetened shredded coconut (toasted optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter and light brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and half of the shredded coconut. Gradually add this dry mix to the wet ingredients.
  5. If needed, add a tablespoon of milk to achieve desired dough consistency.
  6. Fold in the remaining shredded coconut gently.
  7. Scoop dough onto a baking sheet lined with parchment paper and bake for 9-11 minutes until edges are set.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
