  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped (plus extra for garnish)
  • ½ cup ketchup
  • 1 tablespoon mustard
  • ½ cup grated cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, and parsley. Mix gently until just combined.
  3. Scoop about a tablespoon of the meat mixture into your palm; flatten it slightly. Place a small amount of cheddar cheese in the center and fold the meat around it to form a ball. Arrange each bite on the prepared baking sheet.
  4. In a separate bowl, mix ketchup and mustard until smooth. Brush it over each meatloaf bite.
  5. Bake for about 25–30 minutes until cooked through and caramelized on top. Garnish with extra parsley before serving.
