  • 12 oz spaghetti or linguine
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil (or butter) in a large skillet over medium heat. Add sliced onions and sprinkle with salt. Sauté slowly for 25-30 minutes until caramelized.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Meanwhile, boil salted water in a pot and cook spaghetti or linguine until al dente. Reserve ½ cup of pasta water before draining.
  4. Combine cooked pasta with caramelized onions in the skillet. Gradually add reserved pasta water while tossing to create a silky sauce.
  5. Mix in grated Parmesan cheese and balsamic vinegar if desired. Season with salt and pepper to taste. Serve hot, garnished with freshly chopped parsley.
