  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. For the crust, mix graham cracker crumbs, melted butter, granulated sugar, and cinnamon until combined. Press into the bottom of the pan.
  3. In another bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; spread over cheesecake mixture.
  5. Prepare crumble topping by mixing flour, brown sugar, cold butter until crumbly; sprinkle over apples.
  6. Bake for about 45 minutes or until set but slightly jiggly in the center.
  7. For caramel sauce: Combine sugar and water in a saucepan over medium heat; boil without stirring until amber-colored. Whisk in heavy cream, butter, and salt until smooth.
  8. Drizzle caramel sauce over cooled bars before slicing.
