  • 1 1/2 pounds peeled, seeded, and cubed butternut squash (about 2 cups)
  • 2 gala apples (peeled, cored, and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar (or use honey)
  • 2 tablespoons coconut oil or vegan butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine butternut squash, apples, cinnamon, vanilla, brown sugar, and salt; mix well.
  3. Pour the mixture into a baking dish and cover.
  4. Bake for 15 minutes covered to steam the squash.
  5. Remove from the oven and add raisins and nuts; toss gently.
  6. Return to the oven and bake uncovered for another 15 minutes until everything is tender and lightly browned.
  7. Serve warm.
