  • 1 ½ pounds sweet potatoes (about 6 cups), cut into ½” cubes
  • 4 Tablespoons olive oil (divided)
  • 1 teaspoon ground cumin
  • 14.5 ounces black beans, rinsed and drained
  • ½ cup frozen yellow corn, thawed and drained
  • 3 Tablespoons honey
  • 3 Tablespoons lime juice
  • Corn or flour tortillas

Instructions

  1. Preheat your oven to 425°F.
  2. In a bowl, toss sweet potato cubes with 3 tablespoons of olive oil and seasonings until coated.
  3. Spread on a greased baking sheet and roast for 20 minutes, stirring halfway.
  4. Add chopped green and red peppers drizzled with remaining olive oil to the baking sheet; roast for another 20 minutes.
  5. Whisk together honey, lime juice, and cilantro in a small bowl.
  6. Once veggies are roasted, mix in corn and black beans.
