  • 8 oz cream cheese (room temperature)
  • 1 tablespoon vanilla extract
  • 1/4 cup granulated sugar (for cream cheese swirl)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract (for cream cheese swirl)

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper liners.
  2. In a bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla extract until smooth. Gradually fold in the dry ingredients until just combined.
