  • 1 homemade double pie crust (2 sheets)
  • 5 pounds mixed apples (about 11 large)
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • Juice and zest of half a lemon
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your apples by peeling, coring, and slicing thinly. Toss them with lemon juice and zest.
  3. In a skillet over medium heat, combine sugars, flour, salt, spices, and the sliced apples. Stir until the mixture is well coated.
  4. Cook until apples are soft but still hold shape; remove from heat and add vanilla.
  5. Roll out one pie crust into a deep-dish pan. Fill with apple mixture.
  6. Cover with the second crust, crimp edges to seal, and cut slits for steam to escape.
  7. Chill assembled pie while preheating oven.
  8. Brush top crust with milk or beaten egg and sprinkle raw sugar on top.
  9. Bake for about 15 minutes; then cover loosely with foil and reduce temperature to 350°F (175°C). Bake until bubbly and golden.
  10. Cool completely before slicing.
