  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cup chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, mix cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth.
  4. Gradually add dry ingredients to wet mixture and stir gently until combined; do not overmix.
  5. Prepare an 8" x 4" loaf pan with oil spray and pour in the batter. Top with extra chocolate chips.
  6. Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
