  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, oregano, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable bag or dish and pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes (up to 4 hours for best flavor).
  3. Preheat oven to 400°F (200°C) and prepare a baking dish with aluminum foil or parchment paper.
  4. Remove chicken from the marinade (reserve marinade) and let sit at room temperature for 10-15 minutes.
  5. Arrange chicken in the baking dish and pour the reserved marinade over them.
  6. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C). Optional: baste halfway through baking.
