  • 2 large chicken breasts (sliced into thin fillets)
  • 4 ounces cream cheese (softened)
  • 3/4 cup heavy cream
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)
  • 4 cloves garlic (minced)
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice chicken breasts in half lengthwise and season with salt, pepper, and half the minced garlic. Place in a baking dish.
  3. In a bowl, blend softened cream cheese and heavy cream until smooth. Mix in remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, grated Parmesan, and half the mozzarella.
  4. Spread the cream mixture over the chicken fillets, drizzle with reserved oil from sun-dried tomatoes, and top with chopped tomatoes.
  5. Cover with foil and bake for 20 minutes until chicken reaches 165°F (74°C).
  6. Remove foil, stir in spinach, and sprinkle remaining mozzarella on top.
  7. Bake uncovered for an additional 10 minutes until cheese is melted.
