  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice chicken breasts in half horizontally; season with salt, pepper, and half of the minced garlic.
  3. In a bowl, mix softened cream cheese and heavy cream until smooth. Stir in remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half of the mozzarella.
  4. Spread the mixture over seasoned chicken and top with chopped sun-dried tomatoes.
  5. Cover loosely with foil and bake for 20 minutes until chicken reaches 165°F (74°C).
  6. Uncover, mix in spinach, top with remaining mozzarella, and bake for an additional 10 minutes until cheese is melted.
