  • 5 cups butternut squash (about 1 large)
  • 1/2 cup olive oil
  • 1/2 tsp kosher salt (adjust to taste)
  • 1 pinch red pepper flakes (optional)
  • 8 oz block feta cheese
  • 1 lb pasta (such as rotini or orzo)
  • 10 leaves fresh sage (minced)
  • 3 cloves garlic (finely minced)
  • 1 tbsp hot honey or regular honey
  • Fresh cracked black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and black pepper in a baking dish. Place feta in the center and drizzle more olive oil on top. Bake for 30 minutes.
  2. Stir the squash gently, increase oven temperature to 450°F (232°C), and bake for an additional 5-10 minutes until feta is golden brown.
  3. While baking, cook pasta in salted water until al dente; reserve about two cups of pasta water before draining.
  4. Once feta is browned, mix in garlic, sage, and honey while hot. Combine with cooked pasta and add reserved pasta water gradually until creamy.
  5. Adjust seasoning with salt and pepper to taste.
