  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (chicken or turkey)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat your oven to 200°C (400°F). Toss the cubed butternut squash with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 15-20 minutes until tender.
  2. In another baking sheet, toss the trimmed Brussels sprouts with olive oil, salt, and pepper. Roast for about 20-30 minutes until they are crisp and nutty.
  3. Cook the bow tie pasta in salted boiling water according to package directions until al dente; drain while reserving some pasta water.
  4. In a large skillet over medium heat, sauté sliced cooked sausage until browned. Remove from skillet.
  5. In the same skillet, add minced garlic and sauté until fragrant. Stir in butter until melted.
  6. Add drained pasta along with roasted vegetables and sausage back into the skillet. Mix well and adjust seasoning if needed before serving.
