- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup parsnips, diced
- 1 cup celery, diced
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides. Remove and set aside.
- In the same pot, sauté onion and garlic for 3–4 minutes until translucent.
- Stir in tomato paste; cook for another minute before adding a splash of beef broth to deglaze the pot.
- Return seared beef to the pot along with remaining broth and add carrots, potatoes, parsnips, and celery.
- Season with thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat to low; cover and simmer for about 2 hours until the beef is tender.
- Taste and adjust seasoning before serving hot.
