- 3–4 lbs organic chicken (skin removed)
- 1 can full-fat coconut milk
- 2 medium russet potatoes (peeled and cubed)
- 2 medium carrots (peeled and chopped)
- 3 garlic cloves (minced)
- 1–3 scotch bonnet peppers (adjust for spice)
- 2 Tbsps Jamaican curry powder
- Olive oil
- Organic chicken stock
- Marinate the chicken with Jamaican Green Seasoning and curry powder for at least 30 minutes.
- In a large pot, heat olive oil over medium heat. Sauté minced garlic until fragrant.
- Add marinated chicken, coconut milk, and chicken stock. Stir well.
