  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 1/8 tsp. ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed (light or dark)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp. pure vanilla extract
  • 23 large honey crispy apples, grated

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix vegetable oil, eggs, sugars, sour cream, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fold in grated apples carefully.
  6. Pour into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. For the icing: melt butter, brown sugar, and heavy cream in a saucepan until combined; stir in vanilla extract and powdered sugar until smooth.
  8. Drizzle over the warm cake before serving.
