2 medium apples, peeled, cored, and diced
2 tablespoons unsalted butter
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
2 tablespoons water
1 can refrigerated biscuit dough (8 biscuits)
1/2 cup unsalted butter, melted
1 cup granulated sugar (for coating)
Instructions
In a medium saucepan, melt the butter over medium heat. Add in diced apples, granulated sugar, and cinnamon. Cook for about 4-5 minutes until the apples start to soften.
Combine cornstarch and water in a small bowl to create a slurry. Pour this into your apple mixture and let it cook for another minute or two until thickened. Remove from heat and let it cool slightly.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Separate the biscuit dough into individual biscuits. Flatten each one until it's about 1/4-inch thick.
Place about a tablespoon of apple filling in the center of each flattened biscuit. Fold over the edges to seal tightly.
Dip each sealed dough ball into melted butter and roll in a mixture of granulated sugar and cinnamon.
Place the coated dough balls seam-side down on the prepared baking sheet. Bake for 12-15 minutes or until golden brown.
