  • 30 g Light brown soft sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Mixed spice
  • 1 tsp Cornflour (cornstarch)
  • 10 g Unsalted butter
  • 8 g Light brown soft sugar
  • 17 g Plain flour
  • 1/8 tsp Cinnamon
  • 175 g Unsalted butter (softened)
  • 175 g Light brown soft sugar
  • 3 Eggs (large)
  • 175 g Self-raising flour
  • 1/2 tsp Cinnamon
  • 1/4 tsp Mixed spice
  • 175 g Unsalted butter (softened)
  • 350 g Icing sugar
  • 1 1/2 tsp Cinnamon
  • 23 tbsp Milk

Instructions

  1. Prepare the apple filling by peeling and chopping apples into chunks. Cook with light brown sugar, cinnamon, and cornflour until softened. Let cool.
  2. For the crumble topping, mix plain flour, light brown sugar, and cinnamon with butter until crumbly. Bake until golden.
  3. Cream together softened butter and light brown soft sugar until smooth. Add eggs one at a time, then fold in self-raising flour and spices.
  4. Fill cupcake cases with batter and bake until golden brown. Cool completely before coring and filling.
  5. Make buttercream frosting by beating softened butter and gradually adding icing sugar and milk until smooth.
  6. Decorate cooled cupcakes with frosting, remaining apple filling, and crumble topping.
