  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs (room temperature)
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g brown sugar (for apple filling)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 75 g granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon (for cheesecake filling)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Crush the Lotus biscoff cookies and mix with melted butter to form the crust. Press firmly into the bottom of a springform pan.
  3. Toss sliced apples with brown sugar and cinnamon for the apple filling.
  4. For the streusel topping, combine melted butter, flour, brown sugar, and oats until crumbly.
  5. Beat cream cheese until smooth; gradually add sugar, yogurt, vanilla extract, spices, and eggs.
  6. Assemble by layering half of the cheesecake filling, followed by apples and then more filling; top with streusel.
  7. Bake for about 85 minutes until set but slightly jiggly in the center. Cool gradually before refrigerating for several hours.
