  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs (room temperature)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 20 g rolled oats

Instructions

  1. Preheat your oven to 160°C (320°F). Crush the Lotus biscoff cookies into fine crumbs and mix with melted butter. Press into the bottom of a springform pan to form the crust.
  2. In a skillet over medium heat, combine sliced apples with brown sugar and cinnamon. Cook until slightly softened.
  3. For the streusel topping, mix melted butter with flour, brown sugar, and oats until crumbly.
  4. In a mixing bowl, beat softened cream cheese with granulated sugar until smooth. Add Greek yogurt, vanilla extract, and spices, then add eggs one at a time until well combined.
  5. Spread half the cheesecake mixture over the crust, layer on cooked apples, then top with remaining cheesecake mixture and streusel.
  6. Bake for about 50 minutes or until set but slightly jiggly in the center. Cool completely before chilling in the fridge for at least four hours or overnight.
