  • ½ cup all-purpose flour (for streusel)
  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed for streusel)
  • 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, brown sugar, oats, cinnamon, and salt for the streusel topping; cut in cold butter until crumbly.
  3. Combine dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg in another bowl.
  4. In a large bowl, cream together softened butter and granulated sugar until fluffy.
  5. Add eggs one at a time and mix in vanilla extract.
  6. Gradually combine dry ingredients with wet while alternating with milk.
  7. Gently fold in diced apples.
  8. Fill muffin cups two-thirds full with batter and top with streusel.
  9. Bake for 22–25 minutes until golden brown; allow to cool before frosting.
  10. Beat cream cheese and butter until smooth; gradually add powdered sugar and spices for frosting.
