  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in tin foil and greasing it.
  3. For the crust, mix graham crumbs, brown sugar, cinnamon, and melted butter until combined. Press into the bottom of the pan.
  4. Toss peeled and sliced apples with brown sugar and cinnamon; set aside.
  5. In a bowl, beat cream cheese until smooth, then gradually add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until well mixed.
  6. Layer half of the cheesecake filling on the crust followed by half of the apples; repeat with remaining filling and apples.
  7. Prepare crumble topping by mixing flour, brown sugar, cinnamon, oats, and melted butter until crumbly; sprinkle over the top.
  8. Bake in a water bath for about 55 minutes. Cool gradually in the oven before refrigerating for at least four hours.
